Ingredients

4 medium cooking apples, peeled, cored and sliced
4 Tbsp. sugar
1/2 tsp. cinnamon
2 Tbsp. brandy (optional)
6 Tbsp. butter
1/2 c. sugar
3 eggs, lightly beaten
1 tsp. vanilla
1 c. flour
1/2 tsp. baking powder
2 Tbsp. confectioners sugar
Preparation

Place apples in a 9-inch deep pie dish.
Sprinkle with sugar, cinnamon and brandy.
Let stand for 1 hour.
Beat together the butter and sugar.
Add eggs and vanilla and beat for 2 minutes. Fold in the flour and baking powder.
Pour this mixture over the apples and bake, uncovered, at 375\u00b0 for 35 minutes.
Dust with confectioners sugar.
Serve hot with vanilla ice cream or sweetened whipped cream.
Serves 4. Can easily be doubled.
