Healthy Adapted Eggplant Parmesan - cooking recipe

Ingredients
    1 medium eggplant
    1/2 c. egg substitute
    1 c. breadcrumbs
    nonstick spray coating
    any pasta sauce
    nonfat or skim milk Mozzarella cheese
Preparation
    Peel and slice eggplant; dip in egg substitute and coat with breadcrumbs.
    Spray cookie sheet with nonstick coating and bake eggplant slices in a 350\u00b0 oven until soft.
    Top with your favorite sauce and Mozzarella cheese.
    Bake until cheese is melted.
