Tomato Soup - cooking recipe
Ingredients

3/4 c. butter
2 Tbsp. olive oil
1 large onion, thinly sliced
1/2 tsp. thyme
1/2 tsp. basil
salt and pepper to taste
3 Tbsp. tomato paste
1/4 c. all-purpose flour
3 3/4 c. chicken broth
1 (2 lb. 3 oz.) can Italian tomatoes
1 tsp. sugar
1 c. cream
Preparation

Heat 1/2 cup of the butter in large pot and add olive oil.
Add the onions, thyme, basil, salt and pepper.
Cook, stirring occasionally, until onion is wilted.
Add the tomatoes and tomato paste and stir to blend.
Simmer 10 minutes.
Place flour in small bowl and add 5 tablespoons chicken broth, stirring to blend.
Stir into tomato mixture.
Add remaining broth and simmer 30 minutes. Put soup through blender.
Return to heat and add sugar and cream. Simmer 5 minutes.
Swirl in remaining butter and top with croutons.
