Mom'S Zucchini Relish - cooking recipe
Ingredients

10 to 11 c. ground zucchini
4 c. chopped onion
1/2 c. chopped red pepper
1/2 c. chopped green pepper
5 Tbsp. plain salt (not iodized)
2 1/2 c. white vinegar
4 1/2 c. sugar
1 tsp. celery seed
1 Tbsp. nutmeg
1 Tbsp. turmeric
2 Tbsp. cornstarch
Preparation

Mix squash, onions and salt.
Let stand overnight.
Rinse salt off thoroughly.
Add both peppers.
In a pan, heat spices, sugar and vinegar to boiling.
Add vegetables and simmer 30 minutes. Pour into sterilized jars.
