Rice-Stuffed Peppers - cooking recipe

Ingredients
    4 to 6 large green peppers, stems and seeds removed and parboiled for 5 minutes (drain)
    2 c. cooked rice
    1 small minced onion
    1 lb. Neeses sausage, fully cooked
    1 c. shredded Cheddar cheese
Preparation
    Thoroughly mix rice, onion, sausage and 1/2 cup cheese.
    (May add 1/2 teaspoon ground red pepper.)
    Generously stuff peppers with rice mixture; top with remaining 1/2 cup cheese.
