"Heart Smart" Vegetable Pizza - cooking recipe
Ingredients

1 1/2 c. whole wheat flour
1 tsp. active dry yeast
1 tsp. sugar
1/8 tsp. salt
1/2 c. warm water (120~ to 130~)
1 Tbsp. vegetable oil, divided (canola)
1/2 lb. sliced mushrooms (about 2 3/4 c.)
1/3 c. chopped onion
1 (8 oz.) can tomato sauce
1 small green pepper, cut into rings
4 oz. shredded part-skim Mozzarella cheese
1 Tbsp. grated Parmesan cheese
Preparation

In medium bowl, combine 3/4 cup flour, yeast, sugar and salt; add water and 2 teaspoons oil.
With mixer at low speed, beat until flour is just moistened.
Gradually stir in remaining flour to make a soft dough.
Onto lightly floured surface, turn dough and knead about 5 minutes or until smooth and elastic.
In greased bowl, place dough, turning over to expose greased portion.
Cover with towel and set aside in warm place to rise for about 45 minutes or until doubled in size.
