Ingredients

2 c. flour
4 tsp. baking powder
1 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg
3 eggs, separated
1 3/4 c. milk
1/2 c. melted shortening
1/2 c. cooked, pureed pumpkin
3/4 c. chopped pecans
Preparation

Sift together, flour, baking powder, salt, cinnamon and nutmeg.
In a separate bowl, beat egg yolks, then combine with milk, shortening and pumpkin.
Add to flour mixture.
Beat egg whites until stiff; fold into batter.
Pour onto hot waffle iron. Sprinkle with 3 tablespoons pecans, then cook.
Makes 4 servings.
