Carl Gohs' Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. granulated sugar
1 c. vegetable oil
2 c. grated zucchini
3 tsp. vanilla
3 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. ground cinnamon
1 c. nuts (optional)
Preparation

Beat the eggs until light and foamy.
Add the sugar, oil, zucchini and vanilla and mix lightly but well.
Combine the flour, salt, soda, baking powder and cinnamon and add to the egg-zucchini mixture.
Stir until well blended, add nuts and pour into two 9 x 5 x 3-inch loaf pans.
Bake in a preheated 350\u00b0 oven for 1 hour. Cool on a rack.
Makes 2 loaves.
