Halibut (Or Salmon) With Vegetable Crest - cooking recipe

Ingredients
    2 halibut or salmon fillets (about 1/2 lb. each)
    3 Tbsp. lemon juice
    1/2 c. finely grated carrots
    1/2 c. chopped seeded tomatoes
    3 Tbsp. each: green onions, chopped, and grated zucchini
    3 Tbsp. mayonnaise
    1 Tbsp. minced parsley
    1/4 tsp. each: salt and pepper
    2 Tbsp. softened cream cheese (optional)
Preparation
    Lay fish in single layer in shallow pan.
    Pour lemon juice over fish.
    Mix together all other ingredients.
    Mound vegetable mixture atop the fish.
    Bake, uncovered, in a 375\u00b0 to 450\u00b0 oven until fish flakes with a fork (about 15 to 20 minutes).
