Crusty Eggplant - cooking recipe

Ingredients
    1 medium size eggplant
    1 c. fine dry seasoned bread crumbs
    1/4 c. Parmesan cheese, grated
    1 Tbsp. chopped parsley
    salt and pepper to taste
    1 egg
    about 1/4 c. flour
    2 Tbsp. butter or margarine
Preparation
    Peel eggplant into 1/2-inch slices.
