Golden Oatmeal Bread - cooking recipe

1 c. flour
3/4 c. plus 1 Tbsp. quick oats, divided
1/2 c. whole-wheat flour
1/2 c. sugar
2 tsp. baking powder
3/4 tsp. soda
1/2 tsp. cinnamon
3/4 c. unsweetened applesauce
1 egg
1 1/2 tsp. vanilla
1/3 c. golden raisins
1/3 toasted pecans, chopped
Preparation

In a large bowl, combine flour, 3/4 cup of oats, whole-wheat flour, sugar, baking powder, soda and cinnamon. In another bowl, combine applesauce, egg and vanilla. Stir into dry ingredients just until moistened. Fold in raisins and pecans. Pour into an 8 x 4 x 2-inch loaf pan coated with nonstick cooking spray. Sprinkle with 1 tablespoon oats. Bake at 325\u00b0 for 50 to 55 minutes. Cool for 10 minutes before removing from pan to wire rack.
