Granville Island Brown Rice And Salmon Salad - cooking recipe

Ingredients
    3 Tbsp. lemon juice
    2 tsp. grated lemon rind
    1 tsp. Dijon mustard
    1/2 c. vegetable oil
    salt and pepper to taste
Preparation
    Drain salmon; remove backbone and skin.
    Whisk together the sauce.
    In a large bowl, mix rice, cucumber, celery, green onions and fresh dill.
    Pour sauce in and mix.
    Sprinkle chunks of salmon on top; gently mix.
    Chill.
    Serves 6 to 8.
