Potato Candy - cooking recipe

Ingredients
    1 medium Irish potato
    1 box powdered sugar
    peanut butter
Preparation
    Cook potato until done. Mash well. Add sugar slowly until mixture is stiff enough to roll on dough board. Roll on sugar to keep from sticking. Roll 1/4-inch thick. Spread top with peanut butter. Roll up. Chill in waxed paper. Cut into squares.
