Turkey Soup - cooking recipe

Ingredients
    1 turkey carcass
    1 c. or more turkey meat
    4 qt. water
    2 onions, cut up
    2 bay leaves
    1 tsp. salt
    1/2 tsp. pepper
    4 sprigs fresh parsley
    1/2 tsp. dried thyme, crumbled
    2 cloves garlic, crushed
    6 whole carrots, peeled and cut
    1 bunch celery, cut up
    3 whole potatoes, peeled and cubed or 1 c. raw rice
Preparation
    Place carcass and water in a large soup kettle.
    Add onions, bay leaves, salt, pepper, parsley, thyme and garlic.
    Bring to a boil.
    Reduce heat and simmer 1 hour.
    Remove carcass.
    Add vegetables.
    Cook 35 to 45 minutes or until vegetables are tender. Add cubed turkey meat.
    For more seasoning, add 1 teaspoon poultry seasoning.
    Makes 14 cups.
