Tofu Enchiladas - cooking recipe

Ingredients
    12 corn or flour tortillas
    enchilada sauce
    1 lb. tofu, rinsed and drained
    2 Tbsp. peanut butter
    2 Tbsp. tomato paste
    1/4 c. soy sauce
    1 small can chopped olives
    1/2 small can chopped mild Ortega chilies
    1 bunch chopped green onions
Preparation
    Mix tofu and remaining ingredients.
    Spray a 9 x 12-inch pan with Pam.
    Cover bottom of pan with sauce.
    Prepare tortillas by toasting lightly in toaster oven until soft.
    Spread each tortilla with a little sauce and a portion of the tofu mixture.
    Roll and place in pan.
    Cover rolled and stuffed tortillas with more sauce and bake for 25 to 30 minutes at 350\u00b0.
    Better when reheated.
