Spanish Rice Enchiladas - cooking recipe

Ingredients
    1 lb. ground beef
    1 envelope taco seasoning, divided
    2 1/2 c. water, divided
    1 (6.8 oz.) pkg. Spanish rice mix
    2 Tbsp. butter
    1 (14 1/2 oz.) can diced tomatoes (undrained)
    6 flour tortillas (10-inch)
    2 c. (8 oz.) shredded Cheddar cheese, divided
    1 (8 oz.) can tomato sauce
    toppings (as desired)
Preparation
    In a skillet, cook beef over medium heat until no longer pink. Drain. Set aside 1 tablespoon taco seasoning. Add remaining seasoning to beef. Stir in 3/4 cup water. Cover and simmer for 15 minutes.
