Spicy Caraway Beef Kabobs - cooking recipe

Ingredients
    2 Tbsp. water
    2 Tbsp. lemon juice
    2 tsp. low-sodium soy sauce
    2 tsp. grated ginger root or 1/2 tsp. ground ginger
    1 tsp. caraway seed
    1/2 tsp. turmeric
    1/2 tsp. ground coriander
    1/2 tsp. ground red pepper
    1 clove garlic, minced
    1/4 lb. boneless beef round steak, trimmed of all visible fat and cut into 1-inch cubes
    1 onion, finely chopped
    2 c. cooked brown rice
Preparation
    In a medium bowl, combine the water, lemon juice, soy sauce, ginger root, caraway seed, coriander, turmeric, red pepper and garlic.
    Stir in the beef and onion.
    Cover and marinate in the refrigerator for at least 20 minutes, stirring once or twice. Drain the meat, reserving the marinade.
    Thread the meat onto 4 metal skewers.
    Place the kabobs on a grill rack.
    Grill until the beef is cooked through, 10 to 15 minutes, turning the kabobs frequently.
    Meanwhile, in a small saucepan, bring the reserved marinade to a boil.
    Brush the marinade over the kabobs.
    Serve the kabobs on top of the hot, cooked rice.
