Lemon Bread - cooking recipe

Ingredients
    1 c. butter or margarine
    2 c. sugar
    4 eggs
    1/2 tsp. baking soda
    1/2 tsp. salt
    3 c. flour
    1 c. buttermilk
    lemon
    1 c. pecans, finely chopped
Preparation
    Cream the butter and sugar.
    Beat in eggs. Finely grate the lemon rind (reserve lemon) and add to bread batter.
    Stir flour with salt and soda and add alternately with buttermilk.
    Pour batter into two lightly greased and floured 9 x 3-inch bread pans and bake at 350\u00b0 for 1 hour or until bread springs back to the touch.
