Southern Fried Chicken - cooking recipe

Ingredients
    1 c. all-purpose flour
    1 1/4 tsp. salt
    1/2 tsp. pepper
    1 broiler-fryer chicken (3 1/2 lb.), cut into 8 pieces
    1/2 c. milk
    3/4 c. corn or peanut oil
Preparation
    Mix flour, salt and pepper in a large plastic bag.
    Dip chicken pieces in milk, a few at a time, and add to flour mixture in bag.
    Shake well to coat completely.
    Shake off excess flour. Heat oil in large pan over medium heat.
    Brown chicken, turning once, 5 minutes or until golden.
    Reduce heat to medium; cover and cook, turning several times, for 20 minutes or until chicken is fork-tender and juices are no longer pink when thigh (or dark meat) is pierced.
    Uncover and increase heat to high.
    Cook about 2 minutes until crispy, turning once.
    Drain on paper towels. Makes 4 servings.
