Zucchini Pancakes - cooking recipe

Ingredients
    2 lb. unpeeled zucchini, coarsely grated
    1 Tbsp. lemon juice
    1 c. chopped onions
    2 cloves garlic, finely minced
    1/4 c. egg substitute
    1 c. matzo flour
    1 tsp. granulated white sugar
    1/2 tsp. white pepper
    vegetable spray
Preparation
    Drain zucchini in a colander, and squeeze out any excess fluid.
    In a large bowl, combine zucchini with remaining ingredients.
    Beat well with a fork.
    Refrigerate for 1 hour. Form 20 patties with chilled dough.
    Lightly spray frypan with vegetable spray.
    Fry patties over low heat until golden brown. Turn and fry other side.
    Serve warm.
