Potato Soup - cooking recipe

Ingredients
    2 c. cubed potatoes
    3 Tbsp. butter or margarine
    1 c. finely chopped onions
    3 Tbsp. flour
    4 c. milk
    1 1/2 c. shredded Cheddar cheese
    salt and pepper
Preparation
    Boil potatoes in water as if you were going to make mashed potatoes.
    Drain potatoes and set aside.
    Melt butter and saute onions.
    Blend in flour, salt and pepper, if desired.
    Stir in milk.
    Cook over medium heat until mixture is bubbly and slightly thickened.
    Add cooked potatoes.
    You may also add cooked country ham cut into small pieces or top with cooled crumbled bacon.
    Heat slightly longer or add cheese until melted.
