Favorite Ratatouille - cooking recipe

Ingredients
    1 eggplant, peeled and sliced
    1/3 c. olive oil
    3/4 c. thinly sliced onion
    2 cloves garlic, sliced
    1/2 c. pitted black olives
    4 green peppers, cut in rough squares
    2 c. small zucchini, cut in 1/2-inch slices
    2 c. peeled tomatoes, cut in quarters
    olive oil
    1/2 tsp. oregano (if desired)
    1 Tbsp. chopped fresh basil (if available)
    favorite cheese
Preparation
    Saute onion and garlic in 1/3 cup oil.
    Add olives through tomatoes to frying pan and stir.
    Rinse and dice eggplant and stir into preceding.
    Sprinkle with a little olive oil, oregano and basil.
    Top with your favorite cheese and bake in large casserole, 45 to 50 minutes at 325\u00b0.
