Ingredients

1/2 c. butter or margarine
1 c. sugar
1 tsp. grated lemon rind
2 eggs, separated
1 c. flour, sifted
1 tsp. salt
1/4 tsp. soda
1 (1 lb.) jar apricot jam
1/2 c. nuts, finely chopped
Preparation

Cream butter or margarine with 3/4 cup sugar and lemon rind until fluffy.
Add egg yolks, one at a time, beating well after each addition.
Sift together flour, salt and soda.
Blend into creamed mixture.
Spread batter in 12 x 8-inch baking pan.
Cover batter with jam.
Beat egg whites until stiff, but still moist. Add 1/4 cup sugar, beating until meringue forms stiff peaks.
Fold in nuts.
Spread on apricot jam layer.
Bake at 350\u00b0 for 45 minutes or until firm.
Cut into squares and cool.
Makes 48 (2-inch) squares.
