Cinnamon Mini Muffins - cooking recipe
Ingredients

1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
1 egg, lightly beaten
1/2 c. skim milk
1/3 c. margarine, melted
1 c. water
1/2 c. butter (margarine makes them tough)
1/4 tsp. salt
1 c. flour
4 whole eggs
Preparation

Melt butter in boiling water.
Add flour and salt all at once. Beat and cook until mixture forms a ball that doesn't separate. Remove from heat, cool slightly.
Add eggs, one at a time, beating thoroughly after each one.
Drop by teaspoonfuls on greased cookie sheet (or fill a pastry bag with dough and squeeze out onto sheet \"cutting\" the dough off from the bag with a spatula or knife). Bake at 400\u00b0 until golden brown and fluffy, about 30 minutes. Remove from oven, split open and remove any soggy centers.
Cool on rack.
Fill.
These may be made ahead and frozen for a few weeks.
Yield: 40 to 50 little ones.
