Beef-Spinach Stuffed Manicotti - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1/2 lb. beef
    1/2 c. minced onion
    1 c. seasoned bread crumbs
    3 Tbsp. fresh Parmesan cheese
    3 eggs, slightly beaten
    10 oz. frozen spinach, thawed, drained and chopped
    1/2 tsp. salt
    1/4 tsp. freshly ground pepper
    8 manicotti, cooked (slightly underdone)
    2 c. tomato sauce
Preparation
    Preheat oven to 375\u00b0.
    Heat the olive oil in a skillet.
    Add beef and onion.
    Cook until meat has lost its pinkness.
    Put the meat and onion in a bowl and mix with the bread crumbs, cheese, eggs, spinach, salt and pepper.
    Stuff the cooked manicotti with the mixture and make a single layer in an 11 3/4 x 7 1/2 x 1 3/4 -inch baking dish, allowing space between the manicotti for expansion.
    Spoon the tomato sauce on top, cover with foil and bake 45 minutes.
