Steak Parmesan - cooking recipe

Ingredients
    4 medium size, tenderized cube steaks
    1 egg
    2 tsp. water
    pepper to taste
    1/2 c. seasoned cracker crumbs
    2/3 c. Parmesan cheese, grated
    4 slices fried or baked eggplant (optional)
    1 (8 oz.) can pizza sauce (use more sauce if desired)
Preparation
    Beat together the egg, water and pepper.
    Combine crumbs and half of the cheese.
    Dip steaks into egg mixture, then into the crumbs.
    In skillet, brown steaks in hot oil.
    Drain on paper towel.
    Arrange steaks in a baking dish.
    Top with cooked eggplant slice, if desired.
    Cover with pizza sauce and remaining cheese. Bake for 20 minutes at 325\u00b0.
    Serves 4.
