Corn Muffins - cooking recipe

Ingredients
    2 eggs
    1 1/4 c. milk
    1/4 c. plus 2 Tbsp. vegetable oil
    1/4 c. plus 1 Tbsp. sugar
    3 c. Hungry Jack pancake mix
Preparation
    Combine eggs, milk, sugar and oil in a large bowl.
    Add pancake mix. Stir until moistened (batter is very thin; do not overmix).
    Spoon into 12 (3-inch) greased or lined muffin pan cups. Bake at 400\u00b0 for 25 minutes.
