German Potato Salad - cooking recipe
Ingredients

6 potatoes, cooked in jackets
1 small chopped onion
4 Tbsp. sugar
1/2 c. chopped celery
3/4 c. water
3 hard-cooked eggs
1/2 lb. diced bacon
2 Tbsp. flour
1 tsp. salt
dash of pepper
1/3 c. vinegar
Preparation

Peel potatoes and slice.
Fry bacon until crisp, then drain on paper towels.
Saute onion in bacon fat.
Blend in flour, sugar, salt and pepper.
Cook over low heat, stirring until smooth and bubbly.
Remove from heat.
Stir in water and vinegar.
Heat to boil, stirring constantly.
Boil 1 minute.
Stir in carefully the potatoes, celery, hard-cooked eggs that have been chopped and the bacon.
Remove from heat.
Cover and let stand until ready to serve.
Serves 6.
