Easy Potato Chowder - cooking recipe

Ingredients
    4 oz. bacon, diced
    1 c. chopped onion
    2 c. milk or cream
    2 c. chicken broth
    1 tsp. crushed thyme
    3 1/2 c. firmly packed uncooked frozen mashed potatoes
    2 Tbsp. fresh chopped parsley
    dash of salt and pepper
Preparation
    Saute bacon and onion until bacon begins to crisp; remove excess bacon grease, if desired.
    Add milk, broth and thyme; bring to a boil.
    Stir in potatoes; simmer 5 minutes.
    Stir in parsley, salt and pepper.
    Makes 6 servings, each with 175 calories, 14 g fat and 24 mg cholesterol.
