Zucchini Bread - cooking recipe

1 c. raisins or dates
3 c. white flour, sifted
1 Tbsp. baking soda
1 Tbsp. salt
3/4 Tbsp. baking powder
1 Tbsp. cinnamon
4 eggs
2 c. sugar
1 c. vegetable oil
2 c. grated, unpeeled zucchini
2 Tbsp. grated lemon peel
1 c. walnuts or pecans
Preparation

Rinse raisins in water, then drain.
Take 2 tablespoons flour and coat raisins.
Sift flour, baking soda, salt, baking powder and cinnamon.
Beat eggs and gradually beat in sugar and oil. With rubber spatula, blend in dry ingredients, alternating with zucchini.
When thoroughly mixed, stir in coated raisins, lemon peel and nuts.
