Potato Cheese Soup - cooking recipe

Ingredients
    1 1/2 to 2 lb. potatoes
    1 c. shredded Cheddar cheese
    8 oz. heavy whipping cream
    2 Tbsp. Miller's brand chicken soup base
    1/2 stick butter (4 Tbsp.)
    1 scallion, chopped
    1 grated carrot
    1/2 stalk celery, chopped
    1 Tbsp. fresh parsley, chopped
    2 Tbsp. flour
Preparation
    Saute carrot, scallion, celery and parsley in 2 tablespoons of butter.
    Peel and dice potatoes and place in 4 to 6-quart pot with enough water to cover.
    Stir in saute mixture and soup base. Bring to a boil.
    Reduce heat and simmer, uncovered, until potatoes are done.
