Fresh Tomato Sauce With Mushrooms - cooking recipe

Ingredients
    1/2 c. vegetable oil
    1 lb. mushrooms, sliced
    2 small onions, chopped
    2 cloves garlic, minced
    1/2 tsp. basil leaves
    1 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. oregano
    10 Italian plum tomatoes, peeled and coarsely chopped
Preparation
    Heat oil in large saucepan.
    Add mushrooms, onions, garlic, basil, salt, pepper and oregano.
    Saute until onions are transparent.
    Stir in tomatoes.
    Reduce heat and cook for 1 hour or until mixture begins to thicken.
    Serve over your choice of pasta.
    Garnish with grated Romano cheese.
    Makes 3 to 3 1/2 cups.
