Zucchini Bread - cooking recipe
Ingredients

1 c. nuts, chop nuts into medium size pieces
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. flour
1 1/2 tsp. baking soda
3/4 tsp. baking powder
1 c. raisins
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
2 c. grated zucchini (not pared)
Preparation

Beat eggs gradually. Beat in sugar, then oil.
Beat for 2 minutes.
Combine dry ingredients.
Add to first mixture alternately with zucchini. Stir in raisins, nuts and vanilla. Turn into two greased and lightly floured loaf pans (9 x 5 x 2-inch). Bake on lowest rack at 350\u00b0 for about 55 minutes or until loaves test done.
Let stand about 10 minutes.
Turn out onto wire rack to cool.
Dust top with confectioners sugar.
Makes 2 loaves. Freezes well.
