Zesty Stuffed Zucchini - cooking recipe

Ingredients
    4 small zucchini
    1 c. seasoned bread stuffing mix
    2 oz. Blue cheese, crumbled
    1/8 tsp. pepper
    1 Tbsp. butter
Preparation
    Preheat oven to 350\u00b0.
    Spray 8 x 8 x 2-inch baking dish with cooking spray or grease lightly.
    Cook zucchini 5 minutes in boiling salted water; drain.
    Cut lengthwise slice from each to within 1 inch of ends.
    Scoop out pulp and chop with slices. Combine pulp, stuffing, cheese and pepper.
    Stuff into shells, mounding on top.
    Dot with butter.
    Place in dish and bake 25 to 30 minutes.
