Ingredients

1 lb. carrots (4 or 5 medium to large)
1/3 c. maple syrup
1/4 c. butter
1/2 tsp. ginger
1/2 tsp. grated orange peel
small amount chopped parsley
1/2 c. sugar
Preparation

In a saucepan, cook carrots in boiling water until tender (approximately 15 to 20 minutes). Drain carrots. Melt butter. Add syrup, ginger, sugar and orange peel. Stir to mix well and sugar is dissolved. Cool 1 minute. Pour over carrots. Stir until carrots are coated well. Garnish with parsley. Serve warm. Makes 4 servings. Preparation time: 0:45.
