Hoppin' John - cooking recipe

Ingredients
    4 slices chopped bacon
    1 (16 oz.) corn
    black-eyed peas, drained
    1/4 tsp. pepper
    1 medium onion, chopped
    2 1/2 c. cooked rice
    1/2 c. water
    small amount jalapeno pepper (optional)
Preparation
    Microwave bacon about 5 minutes on High, covered.
    Add onion and microwave 4 minutes, uncovered, until onions are cooked.
    Add rice, black-eyed peas, pepper and 1/2 cup water and jalapeno if desired.
    Microwave 8 to 10 minutes.
    Makes 4 to 6 servings.
