Potato Candy - cooking recipe
Ingredients

1 medium potato, cooked
1 1/2 boxes confectioners sugar
peanut butter (creamy or crunchy)
Preparation

Mash potato into contents of 1 box confectioners sugar with pastry blender or fork until it forms a soft dough.
Sprinkle extra confectioners sugar on board or flat surface.
Divide dough into small pieces and roll out as with pie dough. Dust rolling pin with confectioners sugar.
Spread on as much peanut butter as you like and carefully roll up like a jelly roll.
Place each roll in waxed paper and put in freezer for about 1/2 hour. When cold, slice into pinwheels.
Keep refrigerated.
