Mama'S Irish Stew - cooking recipe

Ingredients
    1 lb. lean beef chuck, cubed
    2 Tbsp. fat
    4 c. water
    6 medium carrots, diced
    4 medium potatoes, diced
    1/2 small onion, sliced
    1/2 c. flour
Preparation
    Roll beef chunks in flour and coat well. Melt fat in a large saucepan.
    Brown beef slowly and thoroughly.
    Add 4 cups water. Cover tightly and simmer for 1 1/2 hours.
    At the end of 1 hour, if beef cubes are not completely covered, add 1 cup of water.
    Add carrots, potatoes and onion to saucepan.
    Cover tightly and simmer for 30 minutes until vegetables are tender.
