Pineapple-Date Bread - cooking recipe

Ingredients
    1/4 c. soft margarine
    1/2 c. sugar
    1 egg
    1 Tbsp. lemon extract
    8 1/2 oz. crushed pineapple, drained (save juice)
    2 1/2 c. all-purpose flour
    2 1/2 tsp. baking powder
    1/4 tsp. soda
    pinch of salt
    1/2 c. chopped dates
    1/4 c. water
Preparation
    Combine sugar, egg, margarine and flavoring and beat until smooth.
    Add dry ingredients alternating with pineapple and blend with a whisk.
    Fold in dates.
    Add juice to water and use 1/4 cup of liquid.
    Blend well.
    Pour into well-greased loaf pans.
    Bake at 375\u00b0 for 55 minutes.
    This makes 2 (7 1/4 x 3 1/2-inch size) loaves.
