Potato Frittata - cooking recipe
Ingredients

4 potatoes (1/2 lb.), thinly sliced
3 eggs, beaten
1/4 c. evaporated skim milk
1/3 c. shredded Cheddar cheese
oregano
Preparation

Steam potatoes just until tender; transfer to 8-inch pan.
In bowl, beat together remaining ingredients.
Heat over medium heat. Add egg mix to potatoes.
Cook, stirring frequently to keep even. When eggs are no longer runny, lift edge of Frittata and let any extra uncooked egg get underneath.
Invert onto plate and let sit before slicing in two.
(Great side dish.)
