Ingredients

2/3 c. sugar
1/3 c. self-rising flour
1/4 tsp. salt
2 c. milk
3 egg yolks
2 Tbsp. butter
2 1/2 c. coconut (reserve 1/2 c. for topping)
1 tsp. coconut flavoring
3 egg whites plus 1/2 tsp. coconut flavoring
1 (9-inch) pie crust, cooked
6 Tbsp. sugar (for topping)
Preparation

Mix
all dry ingredients, except coconut.
Melt butter. Add egg yolks, butter and milk slowly to dry ingredients; cook until thick,
stirring constantly. When thick, add coconut (2 cups), mixing well.
Pour into cooked 9-inch pie shell.
