Prune-Nut Bread - cooking recipe

Ingredients
    1 c. dried prunes, chopped
    2 tsp. grated orange rind
    1 c. orange juice
    2 c. all-purpose flour
    3/4 c. sugar
    1 Tbsp. baking powder
    1/2 tsp. salt
    1/2 tsp. ground cinnamon
    2 eggs, beaten
    2 Tbsp. vegetable oil
    1 c. chopped pecans
Preparation
    Combine first 3 ingredients in a large mixing bowl; stir gently.
    Let stand about 30 minutes.
    Combine dry ingredients. Add eggs and oil to prune mixture; stir well.
    Add dry ingredients; stir until blended.
    Stir in pecans.
    Pour into a greased and floured 9 x 5 x 3-inch loaf pan; bake at 350\u00b0 for 55 to 60 minutes or until a wooden pick inserted in center comes out clean.
    Cool in pan 10 minutes.
    Remove from pan and cool on a wire rack.
    Yield: 1 loaf.
