My Mother Lillie'S Spinach Souffle - cooking recipe

Ingredients
    3 Tbsp. butter or margarine
    1/4 c. flour
    1 tsp. salt
    1/4 tsp. pepper
    1/8 tsp. nutmeg
    1 c. milk
    1 c. grated Swiss cheese
    1 c. frozen spinach
    3 eggs, separated
Preparation
    Melt butter; add flour, salt, pepper and nutmeg, then add milk.
    Stir until well blended.
    Cook over low heat, stirring constantly, until thick.
    Add cheese and spinach; cook until cheese is melted.
    Cool; set aside.
    Beat egg whites until stiff; in another bowl, beat yolks.
    Add yolks to cheese and spinach mixture.
    Fold in whites.
    Pour into buttered 1 1/2-quart pan. Bake at 325\u00b0 for 45 to 50 minutes.
    Makes 4 to 6 servings.
