Good-For-You Maine Crab Cakes - cooking recipe

Ingredients
    2 Tbsp. olive oil
    3 Tbsp. Bisquick mix
    1/3 c. fresh basil leaves or parsley or both
    1 tsp. Grey Poupon Parisian spicy brown mustard
    1 (7 to 8 oz.) tub fresh crabmeat
    1/2 c. plain bread crumbs
Preparation
    Mix first 4 ingredients in a mini-chopper until a wet paste. Then, blend with crabmeat in a bowl.
    Using a 2-inch ice cream scoop, place a mound of crabmeat on bread crumbs.
    Shape with two small spatulas and turn to coat, pressing crumbs onto cakes.
    Saute in olive oil at medium-high heat for approximately 2 minutes per side or until crisp.
    Yield:
    four crabmeat cakes.
