Watermelon Sherbet - cooking recipe
Ingredients

4 c. cubed, seeded watermelon
1/2 c. sugar
1 envelope unflavored gelatin
1/3 c. cranberry juice cocktail
Preparation

Place watermelon cubes in blender or food processor and blend until smooth (approximately 3 cups of mixture).
Stir in sugar. In a saucepan, combine gelatin and juice cocktail.
Add to melon mixture.
Pour into an 8 x 8 x 2-inch baking pan.
Cover and freeze for 2 hours or until firm.
Break up frozen mixture and place in a bowl.
Beat with mixer on medium/high speed or until mixture is fluffy.
Return to pan.
Cover and freeze for 6 hours or until firm.
Makes 8 (1/2 cup) servings.
