Lentil Soup(High Protein, Low Cholesterol) - cooking recipe

Ingredients
    1 lb. dried lentils
    1 medium onion
    2 stalks celery, finely chopped
    2 minced garlic cloves
    1/2 c. olive oil
    3 Tbsp. tomato paste (optional)
    lite salt to taste
    pepper to taste
    2 Tbsp. wine vinegar or Marsala
Preparation
    Wash lentils and bring to a slow boil.
    Reduce heat; simmer for 30 minutes.
    Add remaining ingredients and simmer, covered, another 30 minutes to an hour.
    Excellent served with corn bread. Makes 4 to 6 servings.
