Crullers (French Donuts) - cooking recipe

Ingredients
    1 c. all-purpose flour
    1/4 tsp. salt
    1/4 c. sugar
    1/2 tsp. lemon rind (optional)
    1 c. water
    1/2 c. butter or margarine
    4 eggs
Preparation
    Mix and sift flour, salt, sugar and lemon rind.
    Combine water and butter in saucepan.
    Stir until butter melts, bringing to a boil.
    Add flour mixture.
    Cook and stir until batter leaves sides of pan and forms a ball around the spoon (about 1 minute).
    Remove from heat.
    Add eggs, one at a time, beating well after each addition.
    Chill.
    Put through pastry tube or cookie press, using largest serrated tip to form circles on a greased pancake turner. Slip into deep fat heated to 375\u00b0.
    Fry until golden brown. Drain on absorbent paper.
    Dip warm donuts into warm glaze.
    Makes 1 1/2 to 2 dozen.
