Vidalia Onion Relish - cooking recipe

Ingredients
    2 large Vidalia or sweet onions, chopped
    1 Tbsp. vegetable oil
    1/4 c. green pepper jelly
    1 1/2 tsp. salt
    1/2 tsp. dried crushed red pepper
Preparation
    Saute onions in hot oil in a large skillet over medium-high heat, stirring often, 10-15 minutes.
    Add pepper jelly and remaining ingredients, stirring until jelly melts.
    Makes 1 1/2 cups.
    Wonderful alongside black-eyed peas and ham hocks.
