Hoisin Baby Back Ribs - cooking recipe

Ingredients
    5 lb. baby back ribs
    2-inch piece fresh ginger
    1 tsp. grated fresh ginger
    1 c. sugar
    1 c. ketchup
    1/2 c. soy sauce
    1/2 c. oyster sauce
    1/3 c. hoisin sauce
    1 clove garlic, crushed
    3 Tbsp. sake
    cilantro (for garnish)
Preparation
    Cut racks into individual ribs.
    Place in a large pot and cover with water.
    Add slices of ginger.
    Boil gently for about 1 hour.
    Drain ribs and discard ginger.
    Combine sugar, ketchup, soy sauce, oyster sauce, hoisin sauce, grated ginger, garlic and sake. Marinate the cooked ribs in this mixture for 45 hours in the refrigerator.
