Brunswick Stew - cooking recipe

Ingredients
    nonstick cooking spray
    12 oz. cooked ham or chicken breast, cut up
    1 c. sliced onions
    4 1/2 tsp. all-purpose flour
    1 (14 1/2 oz.) can stewed tomatoes (undrained)
    2 c. frozen mixed vegetables
    1 c. chicken broth
    salt and pepper
Preparation
    Spray pan with cooking spray. Heat over medium heat until hot. Add chicken and onion. Cook 5 minutes. Stir in flour. Cook over medium-low heat 1 minute, stirring constantly. Stir in tomatoes, mixed vegetables and broth. Bring to a boil. Reduce heat to low. Simmer, covered, 5 to 8 minutes or until vegetables are tender. Simmer, uncovered, 5 to 8 minutes or until slightly thickened. Add salt and pepper. Excellent with rice or cornbread.
